Lemongrass Chicken Wings

I’m not much of a chicken wing eater, but I do have my moments and usually that’s when Superbowl comes around. I’m not a football fan, but it does play at my house since my husband does like the sport (and reminds me quite regularly he use to play in high school). Superbowl to me means wings and the half-time show. My daughter is very sensitive to spice. Even mild wings and sometimes honey/garlic wings at traditional wing places are too spicy for her. I have found a wing recipe that she will eat and that’s lemongrass chicken wings. It’s Vietnamese influenced, not super saucy, and great grilled or baked in the oven.

Though I love food and find cooking therapeutic, I dread meal planning. There are few meals my kids will eat and my husband is “carb light” - meaning he’s picky on which carbs he eats. Ever seen someone only eat toppings off the pizza? It’s probably him. I came across this Easy Crispy Mongolian Beef recipe from Scrambled Chefs and gave it a try. First off, I’m a mom of 2 young kids and fitness was never part of my lifestyle. To be honest, it never had to be. I’ve been healthy by “my yearly physical standards” and my weight/BMI was always in check without me having to do much.

But something just clicked October 2016. Again to be honest, I don’t know why. I’ve been given an opportunity to reflect on why I started this journey and it’s nothing like I’ve ever written, but something I want to share because a few friends have asked me how I made it into a lifestyle.
